Bagels baked while the street is still asleep
Steeped twelve hours, poured over one big rock

Cold Brew

A small room that opens before the street does. The dough proves overnight, the first tray lands around seven, and the light does the rest of the decorating.

“A bagel is finished at four in the morning. Everything else on this counter is just waiting for the light to come up.”
Why we open early
We started with one deck oven, a bag of bread flour and the stubborn idea that a neighbourhood deserves somewhere to be unhurried before work. Everything is still made in the room you eat in — rolled by hand, boiled, then baked until the crust catches the sun.
The room
Sixteen seats and a window ledge
Shot across one ordinary Tuesday, from the first tray to the last soup of the afternoon.
